Ingredients~
1 pound ground meat
Wing Sauce
14.5 oz. whole kernel corn
14.5 oz. black-eyed peas
Biscuits
Directions~
Brown meat and add wing sauce,corn,and peas. Stir together until well blended and meat,corn,and peas are coated in Wing Sauce. Mix biscuit ingredients together according to recipe(pick your own biscuit dough recipe),but do not bake the biscuits yet. Then take an 8-inch wide plate or cast iron skillet and use to cut out biscuits. You may have to double your recipe depending on how many people your serving. If you have a 8-inch wide cast iron skillet butter it and place one biscuits in the bottom. Spoon some of your meat mixture on top of first biscuit and spread it to cover the entire top of the biscuit. Place second biscuits on top and place in oven to bake for 15 to 20 min or until done at 325 degrees Fahrenheit. If you don't have a 8-inch cast iron skillet the use a skillet that is closest to or at 8-inches wide. Continue with the rest of the biscuits until you've made enough for everyone at your table. One Mini Shepherd's Pie is enough for each person at your table. Remember to use oven mitts when removing skillets, I started to pull one of my cast iron skillets out of the oven not thinking. I quickly pulled my hand away when my fingers touched the handle! That's the only time I've done that. Hopefully I won't do it again! If you want to use a different sauce feel free too. Also with the Wing Sauce, a little goes a LONG way! I poured way to much in when I made this, because the sauce was so thin and came out very fast. I'd say about two to three tbsp. should do it.
